TO ASSEMBLE

10 corn husks, soaked in 1 litre/4 cups warm water for 10 minutes, then drained

300 g/3 cups grated Monterey Jack or cheddar cheese

MAKES 10

Put the pork, bay leaves, 1 teaspoon salt and 1.5 litres/6 cups water in a large saucepan, bring to the boil and simmer over low heat for 1½ hours. Drain (reserving the cooking liquid for later), transfer to a bowl and allow to cool.

GUAJILLO SAUCE

Put the onion, garlic, tomatoes, chillies and 750 ml/3 cups water in a pan, bring to the boil and simmer over low heat for 5 minutes. Transfer to a food processor with 1 tablespoon salt, the paprika, cumin, oregano and a pinch of pepper and whizz for 2 minutes. Mix the masa harina into the warm water until combined. Heat the oil in a frying pan, pour in the sauce, bring to the boil and cook for 5 minutes. Turn the heat down to low, add the masa-water mixture, stir and cook for 5 minutes.

MASA

Put the masa harina and 1 teaspoon salt in a bowl and mix. Add 500 ml/ 2 cups of the reserved cooking liquid and knead for 5 minutes. Add the baking powder and knead for 1 minute. Divide into 10 equal portions.

TO ASSEMBLE

Shred the cooled pork in its bowl, add 1½ cups of the sauce and mix.
